Smoked Caramel Pecan Apple Cobbler
Warm spiced apples. Buttery cobbler topping. Toasted pecans. Caramel. And just enough wood smoke.
A smoker-baked apple cobbler made with tart Granny Smith apples, warm spices, a buttery buttermilk topping, toasted pecans, and ChocZero caramel sauce. Built with significantly less added sugar than the original while keeping everything that makes cobbler worth eating.
Apple cobbler belongs on the smoker.
Apple cobbler already has everything we want in a fall dessert: warm fruit, cinnamon, butter, toasted nuts, and caramel.
So instead of simply baking it in the oven, we're giving it another layer.
Cooking the cobbler uncovered on the smoker allows the apples, pecans, and buttery topping to pick up a subtle layer of real wood smoke while the fruit bubbles underneath and the top turns golden.
The key word is subtle.
This should still taste like caramel apple cobbler.
The smoke is there to make you wonder why it tastes a little better.

The recipe below is the current working version from the Kirby Kitchen Test Kitchen.
We're testing the sweetness level, apple texture, amount of smoke, cobbler topping, browning, caramel level, and how the Whole Earth monk fruit sweeteners perform during a smoker bake.
We're also testing the balance between real brown sugar and alternative sweeteners to significantly reduce added sugar without losing the flavor and texture expected from a proper cobbler.

Ingredients
π Spiced Apple Filling
625 g Granny Smith apples, peeled, cored, and thinly sliced
Juice of Β½ lemon
50 g dark brown sugar
75 g homemade Brown Whole Earth Monk Fruit Sweetener
25 g Whole Earth Monk Fruit Sweetener
Pinch kosher salt
1Β½ tsp ground cinnamon
ΒΌ tsp ground nutmeg
β tsp ground cloves
Β½ tsp vanilla bean paste
120 ml water
Slurry
2 Tbsp cornstarch
3 Tbsp cold water
Buttermilk Cobbler Topping
187.5 g all-purpose flour
25 g granulated sugar
50 g Whole Earth Monk Fruit Sweetener
1 Tbsp baking powder
Β½ tsp kosher salt
Β½ tsp ground cinnamon
113 g cold unsalted butter, cubed
180 g buttermilk
1 tsp vanilla bean paste
Pecan Caramel Finish
99 g pecans, roughly chopped and toasted
75 g ChocZero Caramel Dessert Sauce
Additional ChocZero caramel for serving, optional
Instructions
1. Preheat the Smoker
Preheat the smoker to 350Β°F.
For this dessert, use a mild wood.
Best Choices
π Apple β My first choice. Mild, slightly sweet, and naturally at home with the apples.
π Cherry β Slightly richer fruitwood character.
π° Pecan β A little deeper and especially good with the toasted pecans.
Avoid extremely heavy smoke. This isn't brisket.
Kirby Rule: Dessert should be kissed by smoke, not taste like the firebox.
2. Toast the Pecans
Spread the pecans in a dry skillet over medium-low heat.
Toast for approximately 3β5 minutes, stirring frequently, until fragrant.
Remove from the heat and set aside.
3. Build the Apple Filling
Add the sliced apples, lemon juice, dark brown sugar, homemade Brown Whole Earth Monk Fruit Sweetener, granulated Whole Earth sweetener, salt, cinnamon, nutmeg, cloves, vanilla, and water to a saucepan or Dutch oven.
Cook over medium-low heat for approximately 10β15 minutes, stirring occasionally.
The apples should begin to soften but still retain some structure.
4. Thicken the Filling
Combine the cornstarch and 3 tablespoons cold water in a small bowl.
Whisk until completely smooth.
Slowly pour the slurry into the apple mixture while stirring.
Continue cooking for another 1β2 minutes, until the liquid noticeably thickens and coats the apples.
Remove from the heat.
Kirby Rule: Don't completely cook the apples on the stovetop. They still have another trip through the smoker ahead of them.
5. Make the Cobbler Topping
In a large bowl, whisk together:
Flour
Granulated sugar
Whole Earth Monk Fruit Sweetener
Baking powder
Kosher salt
Cinnamon
Add the cold cubed butter.
Use a pastry cutter, fork, or clean fingertips to work the butter into the flour mixture until it resembles coarse crumbs with some small pieces of butter remaining.
6. Add the Buttermilk
Combine the buttermilk and vanilla bean paste.
Pour into the flour mixture.
Gently stir just until a shaggy, soft dough forms.
Do not overmix.
Kirby Rule: Those little pieces of cold butter create pockets of steam as the topping cooks. Keep the butter cold and stop mixing as soon as the dough comes together.
7. Assemble
Lightly grease a 10-inch cast-iron skillet.
Spread the warm apple filling evenly across the bottom.
Drop spoonfuls of cobbler dough over the apples.
Don't worry about completely sealing the surface.
Leaving small openings allows steam and bubbling apple filling to work their way through the topping.
Sprinkle the toasted pecans evenly over the top.
8. Smoke the Cobbler
Place the skillet uncovered on the smoker.
Smoke at 350Β°F for approximately 40β50 minutes.
The cobbler is ready when:
The apple filling is bubbling around the edges
The topping is cooked through
The top is golden
The pecans are fragrant
The center of the topping no longer looks wet
Rotate the skillet halfway through if your smoker has noticeable hot spots.
9. Add the Caramel
Remove the cobbler from the smoker.
While it's still warm, drizzle approximately 75 g ChocZero Caramel Dessert Sauce across the top.
Don't completely cover the cobbler.
You want pockets of caramel rather than hiding the buttery topping and pecans underneath it.
10. Rest
This part is important.
Let the cobbler rest for 15β20 minutes before serving.
The filling will be extremely hot when it comes off the smoker, and the resting time gives the sauce a chance to thicken slightly.
Serve warm.
Additional ChocZero caramel can be offered at the table.
Performance Notes
π Keep Some Real Brown Sugar
The original inspiration used 300 g of conventional sugar before even counting the caramel sauce.
We're keeping 50 g real dark brown sugar in the apples and 25 g granulated sugar in the topping.
That's intentional.
Real sugar contributes browning, moisture, texture, and flavor. Instead of eliminating it completely, we're using enough to do its job while Whole Earth monk fruit sweetener handles much of the remaining sweetness.
π― Homemade Brown Monk Fruit
The brown sweetener is made by combining:
1 cup Whole Earth Monk Fruit Sweetener + 1 Tbsp dark unsulphured molasses.
That gives us some of the moisture and deeper molasses character associated with brown sugar without requiring another large amount of conventional sugar.
π§ Keep the Butter
This is cobbler.
The 113 g cold butter stays.
We're targeting excessive added sugar rather than removing ingredients that are responsible for the texture and flavor of the dessert.
π° Toast the Pecans
Toasting the pecans before adding them develops a much deeper nutty flavor.
Combined with apple or pecan smoke, they become one of the defining flavors of the finished cobbler.
π₯ Smoke Is an Ingredient
More smoke isn't automatically better.
The goal is enough wood flavor to complement the apples, cinnamon, caramel, butter, and pecans without making the dessert taste savory.
For the first test, apple wood would be my choice.
Make It Your Own
More Caramel: Serve additional ChocZero caramel at the table.
More Spice: Increase the cinnamon or add another pinch of nutmeg.
More Smoke: Use pecan wood instead of apple.
Less Smoke: Use apple wood and shorten the smoke exposure by finishing the cobbler in a 350Β°F oven.
Sweeter: Increase the Whole Earth sweetener slightly rather than immediately adding more conventional sugar.
Vanilla Ice Cream: Absolutely. It's warm apple cobbler. Some things don't need improving.

The calorie number isn't dramatically low because we're deliberately keeping the butter and pecans.
The much bigger difference should be the added sugar, which is exactly what we're targeting with this dessert.

Reheating
For the best texture, reheat individual portions in a 325β350Β°F oven or air fryer until warm.
The microwave works, but the cobbler topping will become softer.
