Instructions
1. Prepare Your Chicken
🔥 Smoked Firehouse Chicken
Season the chicken breast evenly with Firehouse Seasoning.
Smoke using your preferred method until the thickest part reaches an internal temperature of 165°F.
Allow the chicken to rest for approximately 5 minutes, then slice or dice into bite-sized pieces.
Leftover smoked chicken works perfectly. Simply measure 170 g and continue with the recipe.
Kirby Rule: Season the chicken before it goes into the smoker. The BBQ sauce should complement the chicken, not be responsible for all of its flavor.
🍗 Rotisserie Chicken
Remove the skin and separate the breast meat from the bones.
Measure 170 g and shred or chop into bite-sized pieces.
Add approximately ½ teaspoon Firehouse Seasoning and toss until evenly coated.
🥫 Canned Chicken
Drain the chicken thoroughly.
Place between paper towels and gently press to remove as much excess moisture as possible.
Season with approximately ½ teaspoon Firehouse Seasoning.
For better texture, add the drained chicken to a hot skillet for 2–3 minutes, stirring occasionally, before building the pizza.
Kirby Rule: Moisture is the enemy of a crispy pizza. When using canned chicken, drain it well.
2. Preheat the Oven
Preheat the oven to 425°F.
For an extra-crispy bottom, place a sheet pan or pizza stone in the oven while it preheats.
3. Give the Crust a Head Start
Pita
Pre-bake the Joseph's pita for approximately 2–3 minutes.
Lavash
Pre-bake the Joseph's Lavash for approximately 1–2 minutes.
Watch the Lavash closely. Because it's considerably thinner, it can crisp quickly.
You're only giving the crust a head start, not completely toasting it.
Kirby Kitchen Tip: Pita gives you a smaller pizza with a thicker, chewier crust. Lavash gives you a larger pizza with a thin, crispy crust.
4. Add the BBQ Sauce
Remove the crust from the oven.
Pita
Spread 30 g G Hughes Zero Sugar Original BBQ Sauce evenly across the surface.
Lavash
Spread 45 g G Hughes Zero Sugar Original BBQ Sauce across the larger surface.
Leave a small border around the outside.
5. Build the Pizza
Evenly distribute the prepared Firehouse chicken over the BBQ sauce.
Add the bell peppers and red onion.
Sprinkle 2 tablespoons crumbled bacon evenly across the pizza.
Finish with 42 g freshly shredded mozzarella.
Spread everything across the entire crust rather than piling the toppings in the center.
6. Bake
Return the pizza to the 425°F oven.
Bake for approximately 7–10 minutes, until:
The mozzarella is completely melted
The vegetables have begun to soften
The bacon is hot
The edges are crisp
The bottom has reached your preferred level of browning
The Lavash may finish sooner than the pita, so keep an eye on it.
7. Finish
For additional browning on the mozzarella, switch the oven to broil for 30–60 seconds.
Watch closely.
Remove the pizza from the oven and let it rest for approximately 2 minutes.
Finish with crushed red pepper flakes, sliced green onion, parsley, or a light drizzle of additional BBQ sauce if desired.

4. Bring on the Buffalo

We're testing the buffalo-to-ranch balance, amount of chicken, heat level, vegetable ratio, tortilla size, and how well the wrap holds together once toasted.
We're also aiming to keep the finished meal near our target of approximately 10 calories for every gram of protein without stripping away the cheese, ranch, or buffalo sauce that make the wrap worth eating.

Ingredients
🔥 Firehouse Chicken
170 g (6 oz) boneless, skinless chicken breast
1 tsp Firehouse Seasoning
1 tsp avocado oil

2 Tbsp Kickin' Buffalo Sauce
🌯 Build the Wrap
1 large high-fiber tortilla
20 g sharp cheddar cheese, freshly shredded
30 g romaine lettuce, shredded
50 g tomato, diced
30 g Firehouse Pickled Red Onions, well drained
2 Tbsp House Ranch
Instructions
1. Season the Chicken
Pat the chicken breast dry.
Season both sides evenly with Firehouse Seasoning.
Kirby Rule: Buffalo sauce should complement properly seasoned chicken, not be responsible for all the flavor.
2. Cook the Chicken
Heat the avocado oil in a skillet over medium-high heat.
Add the chicken and cook until nicely browned and the thickest portion reaches 165°F.
Remove from the skillet and let it rest for about 5 minutes.
Slice the chicken into thin strips or bite-sized pieces.
3. Make It Buffalo
Place the warm sliced chicken in a bowl.
Add 2 tablespoons Kickin' Buffalo Sauce and toss until every piece is evenly coated.
Kirby Kitchen Tip: Toss the chicken while it's still warm. The sauce coats warm chicken much better than chicken straight from the refrigerator.
4. Warm the Tortilla
Warm the tortilla briefly in a dry skillet or microwave until soft and flexible.
This makes it easier to roll tightly without tearing.
5. Build the Wrap
Lay the tortilla flat.
Layer the ingredients through the center:
Romaine lettuce
Tomato
Firehouse Pickled Red Onions
Kickin' Buffalo Chicken
Sharp cheddar
House Ranch
Keep the filling concentrated toward the center and leave enough space around the edges to close the wrap.
6. Roll It Tight
Fold the left and right sides inward.
Bring the bottom of the tortilla over the filling and roll tightly until completely enclosed.
7. Toast the Wrap
Place the wrap seam-side down in a dry skillet over medium heat.
Toast for approximately 1–2 minutes per side, until the tortilla is lightly golden and crisp and the cheddar begins to melt.
Slice in half and serve immediately.

🍗 Start With Enough Chicken
We're using 6 ounces of chicken breast because this is supposed to function as an actual lunch.
It provides the protein foundation while leaving enough room for the sauces, vegetables, and cheese that make the wrap satisfying.
🌶️ Buffalo Is the Star
This is where Kickin' Buffalo Sauce gets to do what it was built for.
Two tablespoons should provide plenty of buffalo flavor without soaking the tortilla.
If testing tells us it needs more, I'd rather increase it gradually than start with a soggy wrap.
🥫 Buffalo Needs Ranch
We're keeping 2 tablespoons of House Ranch.
The cool, creamy ranch balances the acidity and heat of the buffalo sauce and gives the wrap the contrast that makes buffalo chicken work.
🧅 Bring Some Acid
Firehouse Pickled Red Onions add another layer of acidity along with some crunch.
That sharpness helps cut through the cheddar, ranch, and buttery buffalo sauce.
🧀 Just Enough Cheese
We're using 20 g sharp cheddar rather than loading the wrap with cheese.
Sharp cheddar brings enough flavor that a relatively small amount still makes itself known.

We're using 6 ounces of chicken breast because this is supposed to be lunch, not a tortilla filled mostly with lettuce.
Chicken provides the majority of the protein and gives the wrap enough substance to stand on its own as a meal.
🔥 Start With Firehouse
Firehouse Seasoning brings garlic, pepper, paprika, mild jalapeño heat, and a little sweetness directly to the chicken.
Firehouse Seasoning should link directly to its Performance Pantry recipe on the website.
🧅 Don't Skip the Pickled Onions
Firehouse Pickled Red Onions provide acidity that cuts through the chicken, cheddar, and creamy ranch.
That contrast is important.
They also give us another opportunity to connect this Lunch recipe back to the Performance Pantry.
🥫 Use the Ranch
We're not putting dry chicken and lettuce in a tortilla and calling it a performance meal.
Two tablespoons of House Ranch stay.
If we need to improve the final macros after testing, I'd rather adjust another ingredient than remove the sauce that helps bring the wrap together.

Make It Your Own
More Heat: Add sliced jalapeños or a little extra Firehouse Seasoning.
Buffalo Firehouse: Add a tablespoon of Kickin' Buffalo Sauce to the chicken.
More Crunch: Add shredded cabbage.
Different Cheese: Pepper Jack would be excellent if you want another layer of heat.
