Kickin' Buffalo Chicken Wrap

Wrap it all in a high-fiber tortilla, toast the outside, and you've got something considerably more exciting than another container of meal-prep chicken.

The recipe below is the current working version from the Kirby Kitchen Test Kitchen. The ingredients and portions have been developed, but the recipe hasn't completed our final cook-and-taste test yet.

We're testing the buffalo-to-ranch balance, amount of chicken, heat level, vegetable ratio, tortilla size, and how well the wrap holds together once toasted.

We're also aiming to keep the finished meal near our target of approximately 10 calories for every gram of protein without stripping away the cheese, ranch, or buffalo sauce that make the wrap worth eating.

Ingredients

πŸ”₯ Firehouse Chicken

  • 170 g (6 oz) boneless, skinless chicken breast

  • 1 tsp Firehouse Seasoning

  • 1 tsp avocado oil

🌢️ Buffalo Finish

  • 2 Tbsp Kickin' Buffalo Sauce

🌯 Build the Wrap

  • 1 large high-fiber tortilla

  • 20 g sharp cheddar cheese, freshly shredded

  • 30 g romaine lettuce, shredded

  • 50 g tomato, diced

  • 30 g Firehouse Pickled Red Onions, well drained

  • 2 Tbsp House Ranch

Instructions

1. Season the Chicken

Pat the chicken breast dry.

Season both sides evenly with Firehouse Seasoning.

Kirby Rule: Buffalo sauce should complement properly seasoned chicken, not be responsible for all the flavor.

2. Cook the Chicken

Heat the avocado oil in a skillet over medium-high heat.

Add the chicken and cook until nicely browned and the thickest portion reaches 165Β°F.

Remove from the skillet and let it rest for about 5 minutes.

Slice the chicken into thin strips or bite-sized pieces.

3. Make It Buffalo

Place the warm sliced chicken in a bowl.

Add 2 tablespoons Kickin' Buffalo Sauce and toss until every piece is evenly coated.

Kirby Kitchen Tip: Toss the chicken while it's still warm. The sauce coats warm chicken much better than chicken straight from the refrigerator.

4. Warm the Tortilla

Warm the tortilla briefly in a dry skillet or microwave until soft and flexible.

This makes it easier to roll tightly without tearing.

5. Build the Wrap

Lay the tortilla flat.

Layer the ingredients through the center:

  1. Romaine lettuce

  2. Tomato

  3. Firehouse Pickled Red Onions

  4. Kickin' Buffalo Chicken

  5. Sharp cheddar

  6. House Ranch

Keep the filling concentrated toward the center and leave enough space around the edges to close the wrap.

6. Roll It Tight

Fold the left and right sides inward.

Bring the bottom of the tortilla over the filling and roll tightly until completely enclosed.

7. Toast the Wrap

Place the wrap seam-side down in a dry skillet over medium heat.

Toast for approximately 1–2 minutes per side, until the tortilla is lightly golden and crisp and the cheddar begins to melt.

Slice in half and serve immediately.

πŸ— Start With Enough Chicken

We're using 6 ounces of chicken breast because this is supposed to function as an actual lunch.

It provides the protein foundation while leaving enough room for the sauces, vegetables, and cheese that make the wrap satisfying.

🌢️ Buffalo Is the Star

This is where Kickin' Buffalo Sauce gets to do what it was built for.

Two tablespoons should provide plenty of buffalo flavor without soaking the tortilla.

If testing tells us it needs more, I'd rather increase it gradually than start with a soggy wrap.

We're keeping 2 tablespoons of House Ranch.

The cool, creamy ranch balances the acidity and heat of the buffalo sauce and gives the wrap the contrast that makes buffalo chicken work.

Firehouse Pickled Red Onions add another layer of acidity along with some crunch.

That sharpness helps cut through the cheddar, ranch, and buttery buffalo sauce.

We're using 20 g sharp cheddar rather than loading the wrap with cheese.

Sharp cheddar brings enough flavor that a relatively small amount still makes itself known.

Make It Your Own

More Buffalo: Add another tablespoon of Kickin' Buffalo Sauce.

Hotter: Add sliced jalapeΓ±os or extra cayenne to the chicken.

More Ranch: Serve additional House Ranch on the side rather than overloading the tortilla.

Different Cheese: Pepper Jack is an easy swap if you want more heat.

More Crunch: Add thinly sliced cabbage.

No Pickled Onions: Thinly sliced fresh red onion will work, but you'll lose some of the tang.

Meal Prep: Prepare the chicken ahead of time, but store the tortilla, vegetables, ranch, and buffalo chicken separately. Assemble when you're ready to eat.

Fuel Profile β€” Estimated Per Serving

Using a typical high-fiber tortilla, the current build should land somewhere around:

Calories: ~550 kcal | Protein: ~50 g | Carbohydrates: ~37 g | Net Carbs: ~22 g | Fiber: ~15 g | Fat: ~25 g

Based on one complete wrap with 6 oz chicken breast, 2 tablespoons Kickin' Buffalo Sauce, 2 tablespoons House Ranch, cheddar, vegetables, and a high-fiber tortilla. Nutrition is estimated and will vary depending on the tortilla, chicken, cheese, sauces, and ingredient brands used.

That puts us at approximately 11 calories per gram of protein, which is still very close to the target.

If we want to tighten it toward 10:1 after you test the wrap, I wouldn't touch the buffalo sauce or ranch first. I'd look at the tortilla and cheese choices because we may be able to shave 40–50 calories there without noticeably changing the experience.
