Firehouse Buffalo Beef Quesadilla

Taco-seasoned beef. Buffalo heat. Melted mozzarella. One seriously loaded quesadilla.

Savory ground beef seasoned with Kirby's High-Volume Taco Rub and Firehouse Seasoning, cooked with colorful bell peppers and onion, tossed in Blazin' Buffalo Sauce, and loaded with melted mozzarella inside a crispy Joseph's Lavash.

Sometimes the best recipes aren't planned.

This quesadilla started the way a lot of good meals do: with ingredients already in the kitchen and somebody deciding to put them together.

Ground beef gets seasoned with Kirby's High-Volume Taco Rub and Firehouse Seasoning, creating a savory, slightly spicy foundation before the buffalo sauce ever enters the picture.

Red, yellow, and orange bell peppers bring sweetness and texture, onion adds another savory layer, and Blazin' Buffalo Sauce gives everything its tangy heat.

Then it all gets tucked between layers of low-moisture mozzarella inside a Joseph's Lavash and toasted until the outside is crisp and the cheese is melted.

Ingredients

🥩 Taco-Buffalo Beef Filling

  • 140 g ground beef

  • 30 g yellow onion, diced

  • 50 g mixed bell peppers, diced
    red, yellow, and orange

  • 2 tsp Kirby's High-Volume Taco Rub

  • ½ tsp Firehouse Seasoning

  • 30 g Blazin' Buffalo Sauce

  • Avocado oil spray, only if needed

🧀 Quesadilla

  • 1 Joseph's Flax, Oat Bran & Whole Wheat Lavash

  • 42 g low-moisture part-skim mozzarella, freshly shredded

For Serving

  • 2 Tbsp House Ranch, optional

Instructions

1. Start the Beef

Heat a large skillet over medium-high heat.

Add the ground beef and begin breaking it into small pieces as it cooks.

Because the fat ratio of the beef can vary, you may not need any additional cooking oil.

Cook until the beef has begun to brown and has rendered a little fat.

2. Bloom the Seasonings

Push the beef toward the outside of the skillet, allowing a small amount of rendered fat to collect in the center.

Add:

  • 2 tsp Kirby's High-Volume Taco Rub

  • ½ tsp Firehouse Seasoning

directly to the hot fat.

Let the seasonings cook for approximately 30 seconds, just until fragrant.

Then stir them thoroughly into the beef.

Kirby Rule: Blooming dried spices briefly in fat helps release their aromatic compounds and creates deeper flavor than simply sprinkling them over finished meat.

3. Add the Peppers & Onion

Add the diced onion and mixed bell peppers.

Cook with the seasoned beef for approximately 3–5 minutes, stirring occasionally.

The onion should soften while the peppers develop some color but retain a little texture.

If the beef has released an excessive amount of fat, carefully drain some of it before moving on.

4. Bring on the Buffalo

Reduce the heat to low.

Add 30 g Blazin' Buffalo Sauce.

Toss until the beef, peppers, and onions are evenly coated.

Cook for another 30–60 seconds, then remove the skillet from the heat.

Kirby Kitchen Tip: Sauce the filling instead of the lavash. You'll get buffalo flavor throughout the quesadilla without creating a wet layer against the bread.

Build the Quesadilla

5. Layer It

Lay the Joseph's Lavash flat.

Sprinkle approximately half of the mozzarella over one half of the lavash.

Spread the buffalo beef and vegetable mixture evenly over the cheese.

Top with the remaining mozzarella.

Fold the empty half of the lavash over the filling.

The structure is simple:

Mozzarella → Taco-Buffalo Beef → Mozzarella

That puts melted cheese against both sides of the lavash and helps hold the filling together.

6. Toast

Heat a clean skillet over medium to medium-low heat.

Place the folded quesadilla in the dry skillet.

Cook for 2–3 minutes, until the bottom is crisp and golden.

Carefully flip and cook for another 2–3 minutes, until the second side is crisp and the mozzarella has completely melted.

7. Rest & Slice

Transfer the quesadilla to a cutting board.

Let it rest for approximately 2 minutes before slicing.

Cut into wedges and serve warm.

🌶️ Buffalo Comes Last

The Blazin' Buffalo Sauce gets added after the beef and vegetables are seasoned and cooked.

That means the buffalo sauce doesn't have to carry the entire recipe.

Underneath that heat and acidity is already a fully seasoned beef filling.

🫑 Keep Some Texture

Don't cook the bell peppers into mush.

A little bite from the peppers provides a nice contrast against the ground beef and melted mozzarella.

🧀 Cheese on Both Sides

Splitting the mozzarella between the bottom and top of the filling isn't just about cheese pull.

As it melts, it helps anchor the beef and vegetables inside the quesadilla.

Serving Suggestion

Make It Your Own

More Heat: Add fresh jalapeño or additional Blazin' Buffalo Sauce.

More Taco Flavor: Increase Kirby's High-Volume Taco Rub slightly.

More Buffalo: Serve extra sauce on the side rather than soaking the filling.

More Vegetables: Increase the peppers and onions.

Different Cheese: Pepper Jack works particularly well if you want another layer of heat.

Refrigerator

Store leftovers in an airtight container for up to 3 days.

Reheating

Reheat in a dry skillet or air fryer until the filling is hot and the lavash becomes crisp again.

Avoid the microwave when possible. It'll heat the quesadilla, but you'll lose most of that crispy exterior.
