Firehouse Buffalo Chicken Quesadilla

Taco-seasoned chicken. Buffalo heat. Melted mozzarella. Serious protein.

Tender chicken breast seasoned with Kirby's High-Volume Taco Rub and Firehouse Seasoning, cooked with colorful bell peppers and onion, tossed in Blazin' Buffalo Sauce, and loaded with melted mozzarella inside a crispy Joseph's Lavash.

The original Firehouse Buffalo Quesadilla started with ground beef, but the combination works just as well with chicken.

Chicken breast gives us a leaner foundation and plenty of room for the ingredients that make a quesadilla worth eating: cheese and sauce.

Kirby's High-Volume Taco Rub builds the Tex-Mex foundation, while Firehouse Seasoning adds another layer of garlic, pepper, paprika, and gentle heat. Red, yellow, and orange bell peppers bring sweetness and texture before everything gets coated in Blazin' Buffalo Sauce.

Low-moisture mozzarella holds it all together inside a Joseph's Lavash that's toasted until golden and crisp.

Ingredients

๐Ÿ— Taco-Buffalo Chicken Filling

  • 170 g (6 oz) boneless, skinless chicken breast

  • 30 g yellow onion, diced

  • 50 g mixed bell peppers, diced
    red, yellow, and orange

  • 2 tsp Kirby's High-Volume Taco Rub

  • ยฝ tsp Firehouse Seasoning

  • 30 g Blazin' Buffalo Sauce

  • Avocado oil spray, as needed

  • 1 Joseph's Flax, Oat Bran & Whole Wheat Lavash

  • 42 g low-moisture part-skim mozzarella, freshly shredded

For Serving

  • 2 Tbsp House Ranch, optional

Instructions

1. Prepare the Chicken

Pat the chicken breast dry.

Season evenly with:

  • 2 tsp Kirby's High-Volume Taco Rub

  • ยฝ tsp Firehouse Seasoning

Press the seasonings lightly into the chicken so they adhere.

Kirby Rule: Season the chicken before cooking. Buffalo sauce should be another layer of flavor, not a substitute for properly seasoned meat.

2. Cook the Chicken

Lightly coat a skillet with avocado oil spray and heat over medium-high heat.

Add the seasoned chicken.

Cook until nicely browned on both sides and the thickest part reaches 165ยฐF.

Transfer to a cutting board and allow the chicken to rest for approximately 5 minutes.

Dice or thinly slice into bite-sized pieces.

3. Cook the Peppers & Onion

Add the diced onion and mixed bell peppers to the same skillet.

Cook for 3โ€“5 minutes, stirring occasionally.

The onion should soften while the peppers develop a little color but retain some texture.

All those browned bits and seasonings left behind by the chicken stay in the skillet and become part of the vegetables.

4. Bring Everything Together

Return the sliced chicken to the skillet with the peppers and onions.

Toss everything together and cook for approximately 1 minute.

Taste the chicken mixture before adding more seasoning.

If it needs another little hit of Taco Rub or Firehouse, this is the time.

5. Make It Buffalo

Reduce the heat to low.

Add 30 g Blazin' Buffalo Sauce.

Toss until the chicken, peppers, and onions are evenly coated.

Cook for another 30โ€“60 seconds, then remove from the heat.

Kirby Kitchen Tip: Sauce the filling rather than the lavash. You'll get buffalo flavor throughout the quesadilla while keeping the outside crisp.

Build the Quesadilla

6. Layer It

Lay the Joseph's Lavash flat.

Sprinkle approximately half of the mozzarella over one half.

Spread the Taco-Buffalo chicken and vegetable mixture evenly over the cheese.

Top with the remaining mozzarella.

Fold the empty half of the lavash over the filling.

The build is simple:

7. Toast

Heat a clean skillet over medium to medium-low heat.

Place the folded quesadilla in the dry skillet.

Cook for approximately 2โ€“3 minutes, until the bottom is crisp and golden.

Carefully flip.

Cook another 2โ€“3 minutes, until the second side is crisp and the mozzarella is completely melted.

8. Rest & Slice

Transfer the quesadilla to a cutting board.

Let it rest for 2 minutes before slicing.

Cut into wedges and serve warm.
