Firehouse BBQ Chicken Pizza
Smoky chicken. Crispy bacon. Bold BBQ flavor. Serious protein.
A quick personal pizza loaded with Firehouse-seasoned chicken, smoky bacon, zero-sugar BBQ sauce, colorful bell peppers, red onion, and melted mozzarella.
Choose a Joseph's pita for a smaller, thicker pizza or a full Lavash for a larger, thin-and-crispy version. Smoked chicken is the Kirby Kitchen favorite, but rotisserie or canned chicken makes this an easy meal no matter what you have available.
BBQ chicken pizza just got better.
Sometimes you want pizza without mixing dough, waiting for it to rise, or ordering something that turns a simple lunch into a much heavier meal.
That's where this one comes in.
Firehouse BBQ Chicken & Bacon Pizza combines Firehouse-seasoned chicken with smoky bacon, sweet bell peppers, sharp red onion, melted mozzarella, and zero-sugar BBQ sauce on a quick, crispy crust.
When we have it, smoked Firehouse chicken is the first choice. The smoke naturally complements the BBQ sauce and bacon and gives the pizza another layer of flavor.
But this recipe is built for real life.
Rotisserie chicken gives you a fast option, while canned chicken turns this into something you can make almost entirely from ingredients already waiting in the pantry and refrigerator.
However you make it, the goal stays the same:
A BBQ chicken pizza that's easy to make and worth eating.

Instructions
1. Prepare Your Chicken
🔥 Smoked Firehouse Chicken
Season the chicken breast evenly with Firehouse Seasoning.
Smoke using your preferred method until the thickest part reaches an internal temperature of 165°F.
Allow the chicken to rest for approximately 5 minutes, then slice or dice into bite-sized pieces.
Leftover smoked chicken works perfectly. Simply measure 170 g and continue with the recipe.
Kirby Rule: Season the chicken before it goes into the smoker. The BBQ sauce should complement the chicken, not be responsible for all of its flavor.
🍗 Rotisserie Chicken
Remove the skin and separate the breast meat from the bones.
Measure 170 g and shred or chop into bite-sized pieces.
Add approximately ½ teaspoon Firehouse Seasoning and toss until evenly coated.
🥫 Canned Chicken
Drain the chicken thoroughly.
Place between paper towels and gently press to remove as much excess moisture as possible.
Season with approximately ½ teaspoon Firehouse Seasoning.
For better texture, add the drained chicken to a hot skillet for 2–3 minutes, stirring occasionally, before building the pizza.
Kirby Rule: Moisture is the enemy of a crispy pizza. When using canned chicken, drain it well.
2. Preheat the Oven
Preheat the oven to 425°F.
For an extra-crispy bottom, place a sheet pan or pizza stone in the oven while it preheats.
3. Give the Crust a Head Start
Pita
Pre-bake the Joseph's pita for approximately 2–3 minutes.
Lavash
Pre-bake the Joseph's Lavash for approximately 1–2 minutes.
Watch the Lavash closely. Because it's considerably thinner, it can crisp quickly.
You're only giving the crust a head start, not completely toasting it.
Kirby Kitchen Tip: Pita gives you a smaller pizza with a thicker, chewier crust. Lavash gives you a larger pizza with a thin, crispy crust.
4. Add the BBQ Sauce
Remove the crust from the oven.
Pita
Spread 30 g G Hughes Zero Sugar Original BBQ Sauce evenly across the surface.
Lavash
Spread 45 g G Hughes Zero Sugar Original BBQ Sauce across the larger surface.
Leave a small border around the outside.
5. Build the Pizza
Evenly distribute the prepared Firehouse chicken over the BBQ sauce.
Add the bell peppers and red onion.
Sprinkle 2 tablespoons crumbled bacon evenly across the pizza.
Finish with 42 g freshly shredded mozzarella.
Spread everything across the entire crust rather than piling the toppings in the center.
6. Bake
Return the pizza to the 425°F oven.
Bake for approximately 7–10 minutes, until:
The mozzarella is completely melted
The vegetables have begun to soften
The bacon is hot
The edges are crisp
The bottom has reached your preferred level of browning
The Lavash may finish sooner than the pita, so keep an eye on it.
7. Finish
For additional browning on the mozzarella, switch the oven to broil for 30–60 seconds.
Watch closely.
Remove the pizza from the oven and let it rest for approximately 2 minutes.
Finish with crushed red pepper flakes, sliced green onion, parsley, or a light drizzle of additional BBQ sauce if desired.
Slice and serve warm.
Performance Notes
🔥 Smoked Is the Kirby Kitchen Favorite
When smoked chicken is available, that's the version we reach for first.
Firehouse Seasoning goes onto the chicken before smoking, allowing the seasoning and smoke to become part of the meat rather than simply being added afterward.
That combination works naturally with BBQ sauce and bacon.
🍗 Three Ways to Make It
You don't need to fire up the smoker every time you want this pizza.
Smoked chicken provides the deepest flavor.
Rotisserie chicken makes it incredibly quick.
Canned chicken gives you a pantry-friendly option when convenience matters most.
Use whichever one makes sense today.
🥓 A Little Bacon Goes a Long Way
You don't need to cover the pizza in bacon to taste it.
Two tablespoons of cooked crumbled bacon distributes smoky, savory flavor across the entire pizza while letting the Firehouse chicken remain the primary protein.
Pre-cooked crumbled bacon also makes this an easy ingredient to keep in the refrigerator for quick meals.
🍖 Keep the BBQ Simple
G Hughes Zero Sugar Original BBQ Sauce is the standard sauce used here.
It provides plenty of BBQ flavor without adding a large amount of sugar.
Any sugar-free BBQ sauce can be substituted, and homemade BBQ sauce works as well.
🫓 Pita or Lavash?
Both Joseph's options work, but they make different pizzas.
Pita: Smaller, thicker, and chewier.
Lavash: Larger, thinner, and crispier.
Pick whichever style you're in the mood for.
🫑 Don't Forget the Vegetables
Sweet bell peppers work particularly well with BBQ sauce, while red onion provides a sharper contrast against the smoky chicken, bacon, and mozzarella.
🧀 Keep the Mozzarella
Low-moisture part-skim mozzarella gives us the melt and stretch expected from pizza.
The chicken provides plenty of lean protein, so there's no reason to strip the cheese out just to make the nutrition numbers look better.
Make It Your Own
More Heat: Add sliced jalapeños or crushed red pepper flakes.
More BBQ: Drizzle additional sauce over the finished pizza.
More Smoke: Use the smoked chicken option.
Extra Bacon: Add more if that's the pizza you're after.
More Vegetables: Add mushrooms, jalapeños, or additional peppers.
Cheddar BBQ: Replace a small portion of the mozzarella with sharp cheddar.
Pickled Onion: Replace the fresh red onion with Firehouse Pickled Red Onions after baking.
🔥 Grill Method
Preheat the grill for indirect cooking at approximately 400–425°F.
Briefly toast the pita or Lavash before adding the toppings.
Move the crust to the indirect side.
Add the BBQ sauce, chicken, peppers, red onion, bacon, and mozzarella.
Close the lid and cook until the cheese has melted and the bottom is crisp.
Remove from the grill and rest for approximately 2 minutes before slicing.
