The Firehouse Chicken Wrap starts with a generous portion of chicken seasoned with Firehouse Seasoning, then builds around it with crisp lettuce, tomato, tangy Firehouse Pickled Red Onions, cheese, and creamy House Ranch.
Everything gets wrapped in a high-fiber tortilla and toasted until the outside is warm and lightly crisp.
Simple enough for lunch. Good enough to make again tomorrow.

The recipe below is the current working version from the Kirby Kitchen Test Kitchen. The ingredients and portions have been developed, but the recipe hasn't completed our final cook-and-taste test yet.
We're testing the chicken-to-wrap ratio, amount of Firehouse Seasoning, ranch level, vegetable balance, and whether the finished wrap stays together without becoming overloaded or soggy.
We're also aiming to keep this around our 10 calories for every gram of protein performance target without sacrificing the cheese, ranch, or other ingredients that make the wrap worth eating.

Ingredients
🔥 Firehouse Chicken
170 g (6 oz) boneless, skinless chicken breast
1 tsp Firehouse Seasoning
1 tsp avocado oil
🌯 Build the Wrap
1 large high-fiber tortilla
20 g shredded sharp cheddar cheese
30 g romaine lettuce, shredded
50 g tomato, diced
30 g Firehouse Pickled Red Onions, drained
2 Tbsp House Ranch
Instructions
1. Season the Chicken
Pat the chicken breast dry.
Season both sides evenly with Firehouse Seasoning.
Kirby Rule: Season the chicken itself. A flavorful sauce can't rescue chicken that wasn't properly seasoned before cooking.
2. Cook the Chicken
Heat the avocado oil in a skillet over medium-high heat.
Add the chicken and cook until browned on both sides and the thickest part reaches 165°F.
Remove from the skillet and allow it to rest for about 5 minutes.
Slice into thin strips.
3. Warm the Tortilla
Warm the tortilla briefly in a dry skillet or microwave until soft and flexible.
This makes it much easier to roll without tearing.
4. Build the Wrap
Lay the tortilla flat.
Add the ingredients through the center:
Romaine lettuce
Tomato
Firehouse Pickled Red Onions
Sliced Firehouse chicken
Sharp cheddar
House Ranch
Keep the filling concentrated toward the center rather than spreading it all the way to the edges.
5. Wrap It Tight
Fold the sides inward.
Bring the bottom of the tortilla over the filling and roll tightly until completely enclosed.
6. Toast the Wrap
Place the finished wrap seam-side down in a dry skillet over medium heat.
Toast for 1–2 minutes per side, until lightly golden and crisp.
This step is optional.
But I'd do it.
The warm tortilla, melted cheddar, cool ranch, and crisp exterior make it feel much more like a finished meal than a cold meal-prep wrap.
Slice in half and serve.
Performance Notes
🍗 Don't Be Shy With the Chicken
We're using 6 ounces of chicken breast because this is supposed to be lunch, not a tortilla filled mostly with lettuce.
Chicken provides the majority of the protein and gives the wrap enough substance to stand on its own as a meal.
🔥 Start With Firehouse
Firehouse Seasoning brings garlic, pepper, paprika, mild jalapeño heat, and a little sweetness directly to the chicken.

🧅 Don't Skip the Pickled Onions
Firehouse Pickled Red Onions provide acidity that cuts through the chicken, cheddar, and creamy ranch.
That contrast is important.
They also give us another opportunity to connect this Lunch recipe back to the Performance Pantry.
🥫 Use the Ranch
We're not putting dry chicken and lettuce in a tortilla and calling it a performance meal.
Two tablespoons of House Ranch stay.
If we need to improve the final macros after testing, I'd rather adjust another ingredient than remove the sauce that helps bring the wrap together.
Fuel Profile — Estimated Per Serving
Using a typical high-fiber tortilla and the quantities above, I'd expect us to land approximately around:
Calories: ~500 kcal | Protein: ~50 g | Carbohydrates: ~35 g | Net Carbs: ~20 g | Fiber: ~15 g | Fat: ~20 g
That puts us right around the 10:1 calorie-to-protein target.
However, I wouldn't publish those numbers as final yet.
The tortilla and House Ranch can move the numbers considerably depending on the products/recipes you're using. Once you decide which high-fiber tortilla you normally buy and we finalize the House Ranch macros, we can calculate this accurately.
Make It Your Own
More Heat: Add sliced jalapeños or a little extra Firehouse Seasoning.
Buffalo Firehouse: Add a tablespoon of Kickin' Buffalo Sauce to the chicken.
More Crunch: Add shredded cabbage.
Different Cheese: Pepper Jack would be excellent if you want another layer of heat.
Meal Prep: Keep the chicken, vegetables, ranch, and tortilla separate until you're ready to eat so the wrap doesn't become soggy.
