Pumpkin pie spice is one of those blends that's incredibly convenient to have around, but there's really no reason it has to come premixed from the store.
Making it yourself takes only a few minutes and gives you complete control over the balance.
The Kirby Kitchen version puts cinnamon front and center, backed by warm ginger and nutmeg. Allspice adds depth while cloves provide just enough intensity to round everything out without taking over.
