Pumpkin Spice Coffee Creamer

A rich and creamy homemade pumpkin spice coffee creamer made with real pumpkin, Fairlife milk, heavy cream, maple syrup, vanilla, and warm spices. Designed to bring plenty of fall flavor to your morning coffee while giving you control over the sweetness.
Fall flavor starts with real pumpkin.
Pumpkin spice creamer sounds simple enough: cream, sweetened condensed milk, pumpkin, vanilla, and spices.
And there's nothing wrong with that.
But we wanted to see if we could build something with the same rich, comforting flavor while relying less on sweetened condensed milk and the large amount of added sugar that comes with it.
So we're starting with Fairlife 2% milk and real heavy cream, adding actual pumpkin purée, and using a combination of real maple syrup and golden monk fruit for sweetness.
The maple syrup brings a flavor that naturally belongs with pumpkin and warm spices, while monk fruit lets us control the sweetness without needing to keep pouring in sugar.
The result we're after is simple:

The recipe below is the current working version from the Kirby Kitchen Test Kitchen. The ingredients and method have been developed, but the recipe hasn't completed our final cook-and-taste test yet.
We're testing pumpkin flavor, sweetness, spice, creaminess, consistency, and how well it actually works in a cup of coffee. Measurements or techniques may change as we dial everything in.

Ingredients
1 cup Fairlife 2% Ultra-Filtered Milk
½ cup heavy cream
½ cup pure pumpkin purée
2 Tbsp pure maple syrup
1 Tbsp golden monk fruit sweetener, plus more to taste
1½ tsp pumpkin pie spice
2 tsp vanilla bean paste
⅛ tsp kosher salt
Ingredient Note: Make sure you're using pure pumpkin purée, not pumpkin pie filling. Pumpkin pie filling is already sweetened and seasoned.
Instructions
1. Toast the Pumpkin & Spices
Add the pumpkin purée and pumpkin pie spice to a small saucepan.
Cook over medium-low heat for 2–3 minutes, stirring frequently.
The goal isn't to brown the pumpkin. We're gently cooking it to concentrate the pumpkin flavor and wake up the spices.
Kirby Rule: Give the pumpkin and spices a couple of minutes together before adding the dairy. That little bit of heat helps develop a deeper pumpkin-spice flavor.
2. Build the Creamer
Reduce the heat to low.
Add the Fairlife milk, heavy cream, maple syrup, golden monk fruit sweetener, and kosher salt.
Whisk thoroughly until smooth.
3. Warm Gently
Continue warming the mixture over low to medium-low heat, whisking frequently.
Do not allow the creamer to boil.
We're only looking to warm everything through and fully incorporate the ingredients.
4. Add the Vanilla
Remove the saucepan from the heat.
Stir in the vanilla bean paste.
5. Blend Until Smooth
Carefully transfer the mixture to a blender or use an immersion blender.
Blend for approximately 20–30 seconds, until smooth and creamy.
This step helps incorporate the pumpkin into the dairy and creates a more traditional coffee-creamer consistency.
6. Cool & Chill
Allow the creamer to cool before transferring it to a clean, airtight container or glass jar.
Refrigerate until completely chilled.
Shake well before each use.
How to Use It
Start with 2 tablespoons per 8–12 oz cup of coffee.
Taste before adding any additional sweetener.
Want it creamier? Add another tablespoon.
Want it sweeter? Adjust the golden monk fruit in your cup—or make a note in the comments so we know where everyone lands during testing.
Performance Notes
🎃 Use Real Pumpkin
Pumpkin pie spice alone can make something taste like fall, but it doesn't actually provide pumpkin flavor.
Using real pumpkin purée gives this creamer body, color, and genuine pumpkin character.
🍁 Keep Some Real Maple
We could eliminate the maple syrup completely, but that's not the goal.
A small amount of real maple syrup contributes flavor as well as sweetness and pairs naturally with pumpkin, cinnamon, nutmeg, and other warm spices.
Golden monk fruit provides additional sweetness without requiring us to rely entirely on maple syrup or sweetened condensed milk.
🥛 Why Fairlife?
Fairlife 2% provides a creamy dairy base while bringing more protein than conventional milk.
Heavy cream stays in the recipe because we're making coffee creamer, not pumpkin-flavored milk. A little real cream gives us the richness we're looking for.
🔥 Toast the Pumpkin
Briefly cooking the pumpkin with the spices helps concentrate its flavor and gives the spices an opportunity to become more aromatic before the dairy is added.
It's a small extra step that we think could make a noticeable difference.
Make It Your Own
Sweeter: Add additional golden monk fruit a little at a time.
More Pumpkin: Increase the pumpkin purée slightly, keeping in mind that additional pumpkin will also make the creamer thicker.
More Spice: Add another ¼ teaspoon pumpkin pie spice.
More Vanilla: Add an additional ½ teaspoon vanilla bean paste.
Thinner: Add a splash of Fairlife milk.
Richer: Increase the heavy cream slightly.

Storage
Transfer the cooled creamer to a clean, airtight container and refrigerate.
Because this is a homemade dairy creamer containing real pumpkin, I'd start conservatively and use it within 5–7 days.
Shake well before every use. Some natural separation is expected because we're using real pumpkin and aren't adding commercial stabilizers or emulsifiers.
Discard the creamer if you notice an unusual odor, appearance, or texture.
