Ingredients

  • 1 cup Chosen Foods Classic Avocado Oil Mayo

  • 1 whole head garlic

  • 1 tsp avocado oil

  • 1 tsp fresh lemon juice

  • 1 tsp Dijon mustard

  • ¼ tsp kosher salt

  • ¼ tsp coarse-ground black pepper

Instructions

1. Roast the Garlic

Preheat the oven to 400°F.

Slice approximately ¼ inch from the top of the garlic head to expose the tops of the cloves.

Drizzle the exposed garlic with 1 teaspoon avocado oil.

Loosely wrap the garlic in aluminum foil and roast for 35–40 minutes, or until the cloves are golden, very soft, and easily squeezed from their skins.

Remove from the oven and allow it to cool until comfortable to handle.

2. Make the Roasted Garlic Paste

Squeeze the roasted garlic cloves from their skins into a small bowl.

Mash thoroughly with a fork until the garlic forms a smooth paste.

Kirby Rule: Don't rush the garlic. It's ready when the cloves are completely soft and mash almost like softened butter.

3. Build the Aioli

Add the Chosen Foods Classic Avocado Oil Mayo, fresh lemon juice, Dijon mustard, kosher salt, and black pepper.

Stir until the roasted garlic is completely incorporated and the aioli is smooth and creamy.

4. Chill

Cover and refrigerate for at least 30 minutes before serving.

This gives the roasted garlic, lemon, and Dijon time to work their way throughout the aioli.

Storage

Transfer the finished aioli to an airtight container and keep refrigerated.

For best quality, I'd use the finished Roasted Garlic Aioli within 5–7 days rather than applying the opened mayo's shelf life to the finished sauce. Chosen Foods itself recommends refrigerating its Classic Mayo after opening.
