Ingredients
538 g red onion, thinly sliced
516 g apple cider vinegar
258 g water
43 g Swerve Brown Sugar Replacement
32 g kosher salt
12 g Firehouse Seasoning
2 garlic cloves, smashed
1 teaspoon Mexican oregano
¼ teaspoon ground cumin
2 bay leaves
Instructions
Prepare the Onions
Thinly slice the red onions and place them into a large mason jar or other heat-safe container.
Make the Brine
Combine the apple cider vinegar, water, Swerve Brown Sugar Replacement, kosher salt, Firehouse Seasoning, smashed garlic cloves, Mexican oregano, ground cumin, and bay leaves in a saucepan.
Heat over medium heat just until the salt and sweetener have dissolved.
Do not bring the mixture to a boil.
Pickle
Carefully pour the warm brine over the onions, making sure they are completely submerged.
Allow to cool to room temperature.
Cover and refrigerate overnight before serving.
